Rift Dripper 02

Glazed stoneware cone, made in Maastricht, 60° walls and a single large hole. Holds heat far better than plastic and survives being dropped in a sink. Brews 250–500 g.

Oxygen-bleached, tabbed, sized for the 02 cone and every V60-shaped dripper. Unbleached paper tastes like paper; this does not, and you can skip the rinse if you are in a hurry.

0.1 g resolution, built-in timer, flat top that fits a cup and a dripper together. The single biggest upgrade for anyone still brewing by eye — more than beans, more than a grinder.

Orders placed before 10:00 on a roast day go out that afternoon. Everything else waits for the next roast — we would rather you got it fresh than fast.

If you do not like it, say so

Tell us within 30 days and we will send a different coffee, no charge and no returning the first bag. It happens perhaps once a month.

Reading the shelf

What the three axes actually mean

Every coffee we sell is scored on the same three scales by the same four people, on the same table, on a Thursday morning. The numbers on each bag are those scores.

MellowBright

Acidity

Not sourness — sharpness, the way an apple is sharp and a banana is not. High-grown washed coffees from Kenya and Ethiopia sit at the top. If you drink your coffee with milk, aim low; milk and high acidity fight each other.

DelicateHeavy

Body

How much the coffee physically weighs in your mouth. A washed Yirgacheffe feels like tea; a Brazilian natural feels like drinking chocolate. Espresso and milk drinks want weight. Pour-over usually does not.

LightDark

Roast

How far we took it in the drum. Light keeps the origin's own character and its acidity; dark trades both for chocolate, smoke and forgiveness. Neither is better. Most of our shelf sits between 1 and 3.
